Story of the meal
Chicken tenders are marinated with fresh thyme, lemon and garlic and seared to perfect doneness.. The red potatoes and cauliflower florets are roasted with a little olives oil and paprika and then topped with fresh celery for a flavorful crunch. Dijon mustard is served on the side. The Leek Quiche and Tarte a la Tomatoes are quintessential French picnic foods - the homemade dough is topped with mustard, tomatoes and fresh thyme or filled with sautéed leeks, lightly beaten eggs. A touch of cream and cheese.. the result is simply delicious. A side salad of fresh Beets, Quinoa and Goat Cheese is a perfect compliment to this meal. For dessert Buttermilk Apricot Scones!! Brooke received her Masters of Science at New York University and completed her dietetic training at Mt. Sinai Hospital in affiliation with NYU. She is the founder of B Nutritious, a private nutrition counseling and consulting firm located on the Upper East Side.
